Recipe: Butter Lettuce Salad with Persimmons and Radishes from Food & Wine
Pair with: Minimus Grüner Veltliner Johan Vineyards Willamette Valley 2014 ($27)
Here's exactly what the Minimus folks (a husband and wife up in Oregon) say about their winemaking project:
We are conducting a series of experiments designed to challenge the formal education of Enology. The results will be numbered when released & only produced once. The direction of the project is constantly evolving as new discoveries and inspiring ideas come to our attention. We are uncertain of how or when the experiments may end. The one thing we are certain of thus far in our career is that nothing is absolute.
The crazy thing about this Grüner that they're making from the Willamette Valley is that it is completely recognizable as Grüner. It has all the white peppery, spicy radish green and juicy peach notes that this originally-Austrian variety is renowned for. Yet it's fuller, rounder, richer and weightier--making it ideal for a spicy fall salad rather than a feisty spring one.

Pork chops and apples. Apples and pork chops! Do not question this time-tested pairing. Just do it! We adore the combination of thin, fried, fatty little pork goodness contrasted with a crisp, palate-cleansing bite of autumn-scented apple slaw. This artisan cider from France's Brittany region brings the whole show home, focused on acidic heirloom apple varieties (some of which aren't even allowed to be replanted in the region!) and a natural secondary fermentation to create a fine, sprightly mousse of bubbles.
